Hi Patty! I couldn't find your email on here and wanted to share that cast iron skillet recipe with you I will just do it here (Happy Birthday to your Bailey!)
Preheat oven to 425 F. Generously season both sides of 4 chicken breasts with salt and pepper. Put in cast iron skillet and add 1 whole onion coarsely chopped and 8 cloves of chopped garlic (we like garlic) and 1 package of sliced mushrooms to pan, arranging on top of and beside chicken. Top with 2 tbsp of butter broken into little pats, 2 tbsp italian seasoning. Drizzle olive oil over all.
Bake, uncovered, at 425F for 45-55 minutes, turning once halfway through cooking time.
